Recipe:
Bottom layer
1 cup sea buckthorn berries
¼ cup pomegranate seeds
Half a mango
1 tbsp lucuma powder
1 medjool
Blend all together in a blender until smooth

Middle layer
¼ cup chia seeds soaked in
¾ cup of coconut youghurt
1 tsp vanilla extract
¼ tsp cinnamon powder

Top layer
½ cup coconut youghurt with
½ tsp vanilla extract

I wanted to enter this into Samira’s @alphafoodie #afsummer16 party as its a lot more of a summer feel than my previous entry of warm oats…hope you don’t mind Samira? It’s still winter here in Melbourne but today is a glorious day and you would think it the 1st day of Spring 🌼🌼🌼
Smoothie flavors as you would have seen a sneak peak in my story 🙊🙊 are:
▶️
1️⃣Blueberry, ginger & coconut water
▶️
Blend 1 cup @naturalrawc coconut water, 1 tsp size fresh ginger & 1 cup frozen organic blueberries
2️⃣Strawberry, almond milk & rose water
▶️
Blend 1 cup almond milk @pureharvest 1 cup frozen organic strawberries, 1 tsp rose water
3️⃣Fig, banana, almond milk & vanilla
▶️
Blend ½ cup frozen figs (I had some from summer) 1 frozen banana, 1 cup almond milk @pureharvest and ½ tsp organic vanilla paste

It adds crunch and nutrients and pairs so beautifully with zesty orange and sweet crispy grapes 🍇 I layered baby spinach + one whole orange (half peeled, half left w skin on) + fresh grapes + homegrown dragonfruit (also left half the skin on - doesn’t change the flavour!) & topped it off w candied orange slices + homemade black grape sorBAE (before anything else.. Mango Curry w/ Chickpeas By @thisrawsomeveganlife 💛

Recipe
Ingredients
Chickpeas:
1 ½ cups cooked chickpeas 
2 teaspoons safflower or other neutral oil
¼ teaspoon cayenne
¼ teaspoon ground cinnamon
½ teaspoon Garam Masala 
¼ teaspoon salt

Curry:
¾ cup chopped red onion
1 (1-inch) knob of ginger
3 cloves garlic
2 tablespoons water
1 teaspoon safflower or other neutral oil
¼ teaspoon cumin seeds
2 bay leaves
4 cloves
1 ¼ cups canned or culinary coconut milk
¾ cup ripe mango pulp or puree (unsweetened or lightly sweetened canned)
½ teaspoon salt
2 teaspoons apple cider vinegar
Generous dash of black pepper
¼ teaspoon Garam Masala, for garnish
2 tablespoons chopped cilantro, for garnish

1. Chickpeas: heat the oil in a large skillet over medium heat. When the oil is hot, tilt the skillet so the oil coats it evenly. Add the chickpeas and cook, stirring occasionally, 4 minutes. Add the cayenne, cinnamon, garam masala, and salt and mix well to coat. Cook for another 2 minutes and set aside.
2. Curry: In a blender, combine the onion, ginger, and garlic and blend into a smooth puree with 2 tablespoons of water. Heat the oil in a large skillet over medium heat. When the oil is hot, add the cumin seeds, bay leaves, and cloves. Cook for 1 minute. Add the pureed onion and cook until the onion mixture is dry and does not smell raw. Stir occasionally to avoid sticking, 13 to 15 minutes. Add the coconut milk, mango pulp, salt, and vinegar and mix well. Add the chickpeas and all the spices from the chickpea skillet to the sauce skillet. Add a dash of black pepper.
3. Mix, cover and cook until the sauce comes to a boil, 5 minutes. Reduce the heat to low and cook uncovered until the sauce thickens and desired consistency is achieved, about 15 minutes. Taste and adjust the salt and tang. Add ½ teaspoon or more sugar if the mango pulp was not sweet. Garnish with cilantro and a dash of garam masala and serve hot.
Note: I added extra turmeric powder and chili flakes to the curry, and chopped green onions to garnish. Enjoy! #LetsCookVegan

DE VERMÚ EN CASA: Boquerones encebollados


Que soy un gran fan del vermú no hace falta que os lo diga y mucho menos a aquellos que me seguís en Instagram (aún no lo haces?????) y de hecho tenemos una sección maravillosa que se llama DE VERMÚ EN CASA y que hace tiempo que teníamos algo olvidada. Como esto no lo podemos permitir, me planteé cual sería la siguiente receta a incluir y me he dado cuenta que faltaba uno de los platos que más me piden en casa los boquerones encebollados


¿Quién no se ha tomado un vermú con su fantástica gilda o sus pepinillos rellenos de atún?, falta por supuesto toda una retahíla de recetas de mejillones en vinagre y como no las sardinas y por supuesto los boquerones que hoy os traemos.


Son fáciles de hacer  y se pueden preparar con anterioridad. De hecho aguantan en la nevera un par de semanas, así que es bueno hacer en cantidad y guardarlos para poder ir picando cuando nos apetezca o para usar como entrante un día que no nos apetezca cocinar. Eso sí, os puedo asegurar que o tardarán mucho en desaparecer de la nevera, al más puro estilo del anuncio de fuet de la tele... NO HAN PASADO NI 24 HORAS Y YA NO HAY.... porque realmente están dvicio total.
- INGREDIENTES:

   1 kg de boquerones
   1 cebolla
   1 rama de apio
   2 dientes de ajo
   1 hoja de laurel
   1 dl de aceite
   2 dl de vinagre de manzana
   1/2 litro de vino blanco
   Harina
   Aceite para freir
   la piel de una naranja
   Sal, orégano y tomillo

- ELABORACIÓN: 

Limpiamos bien los boquerones (si no lo ha hecho el pescadero). Los salpimentamos al gusto y los rebozamos en harina.

Calentamos aceite y los freímos un par de minutos. Los escurrimos sobre papel de cocina.

En el mismo aceite pochamos el resto de ingredientes cortados en juliana durante un par de minutos más. Añadimos el vinagre y el vino blanco y cocemos durante 20 minutos.

En una cazuela de barro colocamos los boquerones bien escurridos y le añadimos por encima la salsa de cebolla y vinagre. Rallamos la piel de la naranja y la añadimos a la cazuela. Tapamos y dejamos al menos 24 horas en la nevera para que todos los sabores se junten antes de disfrutar con un buen trozo de pan.

- MARIDAJE: 

Un vermú reserva con su trocito de naranja.

- COSTE: barato.
- DIFICULTAD: fácil.
- TIEMPO:  20 minutos más 24 horas de maceración. 
- CALÓRICO: el plato estupendo, el vermú un poco menos.
