BAKED LEMON CHICKEN WITH POTATOES & CARROTS
Ingredients:
- A whole chicken
- 8 to 10 potatoes, cut into wedges
-3 carrots , cut into slices
- 3 tbsp olive oil
- 1 tsp salt
- ½ tbsp oregano
- ½ tsp pepper
-1 tsp dried sage
- juice of 1 lemon
-1 tsp mustard
-1 cup beer
Directions:
- Place chicken and the potatoes into a deep roasting pan
-In a mixing bowl whisk the olive oil, mustard and the lemon juice. Pour over the chicken, potatoes and carrots.
- Place the squeezed lemon halves in the chicken’s body cavity.
- Rub salt ,oregano and sage over the chicken and top with some fresh ground pepper.
- Add 1 cup of beer into pan, and place the pan, covered, in a preheated oven for 1 hour and 15 min. Bake at 400F ( 180C ).
- Continue cooking, uncovered, for 10 more min, until chicken and veggies are crispy and golden.
Serve warm, with Feta cheese.
