Why is it that you can sprinkle pomegranate seeds over anything and it makes it look absolutely amazing?

Like these baked #eggplants by @fatchickinthebigsmoke ?!?

I have never bake them whole like this… But you can bet I will be soon!

What do you make for lunch when you have a vegetarian over? 😳🤔🤔 baked aubergines! 🍆 👌🏻 with quinoa salad to get some protein in her 😜. Effortless to prepare… Just make few slits in the flesh, season with garlic, oregano, basil. Drizzle with olive oil, sprinkle some sea salt and black pepper. Bake for about 20/25 mins (200C) and bosh… Heathy, nutritious lunch for a vegetarian
