Blake Eye Bean Salad
Ingredients
-1 large tomato, diced
-2 carrots, diced
-1 onion, finely chopped
-1/2 cup chopped celery -1 small red bell pepper, finely chopped
-2 tbsp chopped green onions
-2 tbsp chopped fresh parsley
-2 tbsp olive oil
-1 tsp vinegar or lemon juice -Salt and freshly ground black pepper
-2 cups black eye peas, cooked
Directions
In a medium bowl, toss together black-eyed peas, tomato, celery, carrots, red bell pepper, onions and parsley.
In a small bowl, vinegar and olive oil. Season with salt and pepper. Toss into the vegetables. Cover, and chill in the refrigerator 8 hours, before serving.
