Greek Semolina Halva

Lemon - Cranberry Halva


INGREDIENTS


1 cup sunflower oil

2 cups coarse semolina

Zest of 1 lemon

1 tsp cinnamon

2 tbsp dried cranberries

for the syrup


2 cups sugar

3.5 cups water

some lemon rind

1 tbsp fresh lemon juice

DIRECTIONS


In a small pot add sugar, water, lemon juice and bring to a boil for a couple of minutes.


In a large pot add the oil ,semolina and stir until golden.


Simmer for 5 min.and stir until the mixture starts to thicken and come away from the sides of the saucepan.


When you’ve achieved the right color, add the lemon zest and the cinnamon. Pour the syrup into the semolina.

Remove from heat and Keep stirring until all of the syrup is combined with the semolina and starts to thicken.

Add the Cranberries , mix and Pour Halva into your pan of choice ( I use a bundt pan ) and let cool before serving.
