Recipe:
Ingredients:
1 tbsp of avocado oil
2 cups of cooked chickpeas or 1 can
3 cloves of garlic, minced
1 tsp of cumin powder
¼ tsp onion powder
Pinch of cayenne pepper
2 tbsp liquid aminos of shoyuTo assemble your tacos:
Corn tortilla 🌽
Vegan Mayo
Green tomatoes 🍅 💚
Avocado slices 🥑
Parsley leaves 🍃
Lime 🍋Guidance:
In a medium size skillet, heat the oil until shimmering, add the garlic and sauté for 30 seconds.
Add the chickpeas and sauté for a minute.
Add the seasonings and let simmer for 5 to 10 minutes.
To assemble your tacos, spread some vegan Mayo on your tortilla, add refried chickpeas, avocado slices, parsley leaves, tomatoes, sprinkle some more cayenne pepper and cumin powder, a squeeze of lime and enjoy! #letscookvegan
