Buckwheat pizza by @rebelrecipes 馃挌
(with pepper dip, vegan mozzarella and fresh figs)
Makes two small pizzas
Pepper dip ingredients;
• ½ cup of hazelnuts
• 1 tsp cumin seeds
• 1 tsp chilli flakes
• 1 jar of roasted peppers
• 2 tablespoons tomato pur茅e
•2 tsp maple syrup ( or agave)
• Juice of ½ lemon
• 2 tbsp olive oil
• Himalayan salt
• Pepper
Buckwheat flatbread ingredients;
• 1 cup buckwheat flour
• 1 tbsp. olive oil
• Pinch pepper
• 1 tsp pink Himalayan salt
• 1 tsp baking powder
• ½ cup water
Topping;
• 1 fresh fig sliced
• Vegan mozzarella sliced
• Few Pine nuts
To make the pepper dip;
1. Add all the ingredients apart from the olive oil to a food processor and blitz to a paste
2. Slowly pour in the olive oil until really smooth and glossy
3. Taste and add more salt and pepper if needed.
To make the flatbread bases;
1. Pre-heat a griddle pan (or frying pan) so that its nice and hot. In a bowl mix the flour, oil, baking powder, salt & pepper and then add the water. Mix to form a dough and knead a little so that it comes together and then divide into two.
2. On a floured chopping board roll out the dough and then place on the griddle pan (griddle pans work the best as you get lovely charred stripes on the flatbread but a frying pan also works).
3. The flatbreads will literally cook in a couple of minutes, simply flip them over when the underside is starting to char and cook on the other side a minute or so longer
To make the pizza;
1. When the flatbreads are cooked, top with some of the pepper dip and mozzarella.
2. Grill for a few minutes on a medium heat until the mozzarella starts to melt then remove from under the grill.
3. Top with fresh figs and pine nuts to serve.
