Easy Recipe: (Makes about 20 truffles)
Truffles:
½ beet (peeled, make sure it’s not too big)
1tbsp beet root powder
1 cup finely shredded unsweetened coconut
¾ cup ground almonds
2tsp cacao powder
2tbsp white almond butter
2tbsp melted coconut butter
2tbsp brown rice syrup

White chocolate coconut coating:
½ cup melted cacao butter
¼ cup coconut butter
2tbsp brown rice syrup
1 cup finely shredded unsweetened coconut
