Rainbow fruit & black rice parfait 馃挅

(serves 1)
1/3 cup coconut milk
1 tbsp chia seeds
1 tsp matcha powder
1/3 cup cooked black sticky rice
1 nectarine, chopped
¼ pomegranate, arils only
Handful of other fruits, to garnish (I used raspberries and cherries)
1. At least 2 hours beforehand, combine chia seeds, coconut milk and matcha powder in a bowl and mix together. Set aside in fridge.
2. Prepare the fruits.
3. Spoon half of the black sticky rice in a glass or jar. Pour some coconut milk over the rice, if desired.
4. Continue to layer your glass or jar with pomegranate arils, nectarine pieces, remaining black rice and matcha chia pudding.
5. Garnish with additional fruit as desired.
CAULIFLOWER CRUST PIZZA WITH PESTO By @FoodByMaria
Recipe:
5 cups chopped cauliflower (about 1 medium head)
2 chia eggs (2 tbsp chia, 5 tbsp warm water), or ½ cup egg whites
3 tbsp. grated vegan parmesan cheese
¼ cup parsely
½ tsp. black pepper
½ tsp. salt
Topping
½ cup pesto
1 avocado
rocket
sesame seeds
nutritional yeast
pine nuts
finely chopped red beets (raw)
radishes
- use as much or as little of these topping ingredients as you like! experiment, and use what you know you like!
INSTRUCTIONS
1. Preheat oven to 400 degrees.
2. Line a baking sheet with parchment paper.
3. Steam cauliflower (chopped), for 10 minutes.
4. Once steamed, set aside, and cool.
5. Make your chia eggs, combine both ingredients, and let it sit for 5 minutes.
6. Now add cauliflower to a food processor, and pulse, in batches if needed till you reach a course,
7. “wet” bread crumb like consistency.
8. Now add the cauliflower to a large bowl, and add the remaining crust ingredients. Mix thoroughly.
9. Now transfer the mixture onto the parchment paper and begin to form a crush using your hards. The crust should be about ¼inch thick, but do what you like!!
10. Bake until brown and golden should be about 35 minutes.

Blueberry Chia Parfait w. Tahini Granola by @myberryforest 馃挋
Recipe: (Serves: 1)
Ingredients
Blueberry chia parfait
½ cup cashews (soak cashews)
½ cup + 2 tbsp creamy coconut milk or other plant-based milk (I used ½ cup coconut milk and 2 tbsp coconut cream)
1,5 tbsp chia seeds
3-4 tbsp frozen (or fresh) blueberries
1,5 tbsp lemon juice
2 tsp maple syrup
For layering: more blueberries and tahini granola
Instructions
Preparations for blueberry chia parfait: Soak cashews for 2 - 4 hours in warm water: put cashews in a jar or a bowl and cover with water.
Blueberry chia parfait: when cashews are ready, drain and rinse them properly.
Blend all parfait ingredients in a high-speed blender or powerful food processor until smooth consistency reached.
For a two toned parfait add first 2 tbsp of blueberries and blend all ingredients.
Divide the blended mixture in half, put one half into the fridge to set (for 10 min or overnight) and the other half into a bowl and mix in 2 tbsp blueberries.
Put the other parfait mixture into the fridge and let set for 10 minutes to overnight.
Layering the parfait: mix the thick parfait with a spoon and add more plant-based milk if needed. Put half of the parfait into a small jar, add crumbled granola and blueberries. Add the second parfait layer, granola and blueberry toppings.
Notes
For a less thick and creamy parfait, just add more liquids e.g. plant-based milk.

Ingredientes:
Muslitos de Pavo
1 Limon
Sal
Pimienta
Cabeza de Ajos
Chorrete de Aceite
2 Cebollas
200 Ml de Hidromiel
Trozos de Calabaza
Comenzamos nuestra receta colocando los muslitos de Pavo en una bandeja de Horno, le agregamos el jugo de un lim贸n y dejamos en el interior de la bandeja las cascaras, ya que aportaran aroma a la hora de hornearse
Sal pimentamos los muslitos y le agregamos una cabeza de ajos sin pelar en un lado de la bandeja del horno y un poquito de aceite por encima de los muslitos de pavo y le incorporamos dos cebollas sin pelar.
Horneamos a 200 潞 durante 15 minutos, pasado ese tiempo nos rendimos a la llamada del cuerno vikingo y sacamos nuestra Hidromiel La Runa, vertiendo esta en la bandeja de horno lo que har谩 desglasar la bandeja. Acoplamos unos trozos de calabaza cortadas gruesas para evitar que se desmenucen en la posterior cocci贸n en el horno .
Horneamos 40 minutos a unos 150 潞 o hasta que la piel este crujiente o tostada.
Dejamos reposar la carne unos cinco minutos, aprovechando este tiempo para hacer una salsa con los jugos del asado, la hidromiel y parte de la cebolla y calabaza, a esta salsa la vamos a bautizar con la salsa de Odin.
A la hora de emplatar usarmeos los bastones de calabaza para hacer descansar las patas del Pavo y comenzamos a ba帽ar nuestros muslitos con la Salsa de Odin.
Es el momento de disfrutar el ritual moderno de la Victoria.
