Baked eggs with tomato, onion and herbs
INGREDIENTS:
- 2 eggs
-1 tbsp olive oil
- 1 cup of tomato, grated
- 2 onions, cut into rings
- 2 tbsp water
- 2 bay leaves
- 1 stick of cinnamon
- salt - pepper
- ½ tbsp fresh thyme, chopped
- ½ tbsp fresh chives, chopped
DIRECTIONS:
Heat olive oil in a large pan over medium heat and sauté the onion, until is starting to get soft.
Add the tomatoes and 2 tbsp of water.
Simmer in medium heat, about 3 min. Add the bay leaves, cinnamon stick, thyme and chives.
Carefully, break the eggs into pan and cook for about 3 min. When eggs are done, sprinkle on salt and black pepper.
