GLAZED LEMON POPPY SEED & CRANBERRY BUNDT CAKE

Ingredients:

400 g all purpose flour, sifted
2 tsp baking powder
½ tsp salt
2 cups granulated sugar
1 cup butter, melted
½ cup fresh lemon juice
Zest of 2 lemons
1 ½ cup buttermilk
3 large eggs
1 cup cranberries
Lemon Glaze
2 cups confectioners’ sugar + 3 tbsp fresh lemon juice
Directions:

Sift the flour into a large bowl. Whisk in the salt, baking powder and poppy seeds. Set aside.
Place melted butter and sugar in a stand mixer bowl . Beat on medium high until mixture is blended, about 2 min.
Beat in eggs, lemon zest & juice. Add the dry ingredients and buttermilk. Beat mixture until it becomes fluffy. Fold in cranberries and mix.
Pour batter into bundt pan and Bake for 1 hour at 150 C , until a cake tester inserted into the center comes out clean. Cool cake in the pan on a wire rack for 15 minutes. Invert the cake onto the rack and cool completely.
Lemon Glaze: Place confectioners’ sugar in a medium bowl, stir in lemon juice (glaze should be thick, yet pourable). Add more sugar or lemon juice, as necessary, to achieve desired consistency. Drizzle over cake , Slice and Serve.
