Rainbow salad with naturally made blue rice by @elavegan 💚
Consists of:
Yellow, orange and red peppers, grated carrot, cucumber and zucchini + zucchini rolls. I also added some cherry tomatoes, red cabbage and blue rice!Recipe for the natural blue coloring: Juice ¼ of a red cabbage and add about 1/8 tsp of sodium bicarbonate (baking soda) to the juice. It will change the color from purple to blue. If you add more baking soda it will turn turquoise. Mix 1-2 tbsp of the blue juice with some rice to color it blue. It actually tastes pretty good!The salad dressig (not visible on the pic) was made from: ½ avocado, 3-4 mini cucumbers, 3 cloves of garlic, 1 small thumb of ginger, juice of 2 limes, ½ tsp of turmeric powder, salt and pepper to taste.
