Delicious fresh veggie stir fry by @mississippivegan ♡ Completely vegan!
Boil vermicelli noodles.
Set aside in a large bowl.
In a pan, sautee onions and chives.
Once caramelized, place in the bowl with noodles.
Steam asparagus and carrot slivers.
Place them into the bowl.
Add desired amount of cherry tomatoes, cutting some in half, and leaving some whole.
Squeeze the juice of one large lime into the bowl.
Then add a few splashes of tamari or soy sauce.
Toss and mix thoroughly.
Taste, and add more soy sauce if desired.
Garnish with fresh Thai basil and chopped green onions.
Optional: Add raw cashews or hemp seeds for a nice variation.
Add crushed red pepper for a kick.Enjoy & glow lean!
