ZUCCHINI MUFFINS by @anettvelsberg
WHAT YOU NEED:
1 zucchini, shredded
a handful of sun-dried tomatoes, chopped
300 g of rice flour
300 ml of gluten free oats
50 g of sesame seeds
1 tsp of baking soda
1 tsp of baking powder
2 tbsp chia seeds soaked in 150 ml water
2 tbsp apple cider vinegar
200 ml soy/almond milk
2 tbsp of oil
¼ tsp cumin
1 tsp of salt
pumpkin seeds
oilHOW TO MAKE:
1. Mix the rice flour, oats, soda, baking powder, salt & cumin together in a large bowl. in a separate bowl, mix together the soy milk, apple cider vinegar and oil. add the shredded zucchini, chopped sun-dried tomatoes and sesame seeds to the dry ingredients and then mix in the wet ingredients.
2. Oil or line the muffin pan with papers (oil the papers as well), spoon the dough into the pan, sprinkle pumpkin seeds on top of the muffins and bake at 190 C for about 20 minutes ( or do the toothpick trick to know whether it is done).
3. Allow it to cool and bit & then enjoy.
