Brown rice deconstructed sushi plate by @earthfawn 💚

Recipe:
Ingredients:
- 1.5 cup brown rice, rinsed
- 2 sheets seaweed
- Sliced cucumber, de-seeded (sushi filling)
- Sliced avocado (sushi filling)
- 5 button mushrooms
- Soy & garlic marinated tofu
- Half an avocado for garnish
- Coriander for garnish
- Red cabbage for garnish
- Soy sauce for garnish
- Lime for garnish
Method: - Cook brown rice until soft, add sushi vinegar, salt and brown sugar. Let cool as you fold ingredients together.
- Wash mushrooms and place in oven for 40 minutes
- Fry tofu in a little oil until golden brown on each side.
- Half the rice. Use one half in a for your plate, use the other half to roll your sushi. - To roll your sushi: place rice in a thin layer (but with no gaps) until the 4th line of your seaweed. Add your fillings to the centre of the rice horizontally. Start rolling buy tucking in the front and squeezing gently as you roll tightly. Use your fingers to hold your fillings in place. Seal with a wet finger and let dry. Cut rolls with a very sharp knife and wet the knife every time you make a new cut.
- Cut your half avocado as desired and start assembling your plate. I placed brown rice in a pile, the rolls, red cabbage, mushrooms, tofu, the avocado with chilli flakes and coriander to garnish. Serve with soy sauce. Enjoy! #letscookvegan
