CAPRESE SALAD
Ingredients:
For the salad:
* 1 pint cherry tomatoes, halved
* 1 bunch fresh basil, thinly sliced
* 250gr/9oz fresh mozzarella diced into bite-size pieces
For the dressing:
* ¼ cup balsamic vinegar
* ¼ cup dark brown sugar

Directions:
1. In a sauce pot over medium-low heat add the balsamic vinegar and the brown sugar. Cook for 3-5 minutes until bubbly and thick. Allow to cool
2. Add the halved tomatoes and fresh mozzarella to a salad bowl. Before serving, add in the fresh basil and drizzle the dressing over the salad.
