Jazz up a regular fruit salad by adding this deliciously refreshing mint and basil pesto. Not much of a recipe required, simply blend up the following ingredients to taste…. A handful of fresh mint
A smaller handful of fresh basil
Squeeze of lime juice
Sweetener of choice (either maple syrup, stevia, raw honey or zylitol)
A few spoons of warm water
Top with a generous dollop of coconut cream or creme fraiche

Col rellena de ternera al curry con manzana


Si es que hay platos que requieren poco tiempo en cocina pero que cuando los presentas en una mesa se convierten en todo un manjar y parece que te has pasado dos días cocinando. Esto es lo que pasa con este plato, fácil de preparar y con unos ingredientes, también, fáciles de encontrar en nuestros mercados, pero que tanto por la pinta como por el sabor se convierten en auténticos manjares.


Además es un plato muy versátil, ya que se puede cambiar el relleno por lo que queramos, por ejemplo por setas y tofu o por gambas y pescado, teniendo platos diferentes con muy pocos cambios. Es también una forma fácil de que los peques de la casa coman alguna verdura que de otra manera suelen rechazar.



- INGREDIENTES:


   8 hojas grandes de col lombarda
   300 gr de carne de ternera picada
   100 gr de bacon
   1 cebolla
   1 cucharada de salsa de tomate
   1 cucharada de mostaza
   1/2 vaso de vino blanco seco
   1 cucharada de curry en polvo
   1 manzana
   1 manojo de perejil
   2 cucharadas de mantequilla
   1 cucharada de queso rallado para gratinar
   1 cucharada de harina
   1/2 vaso de leche
   Nuez moscada, sal, pimienta y aceite

- ELABORACIÓN: 

Limpiamos bien las hojas de la col lombarda y eliminamos el tallo con ayuda de una puntilla. Ponemos una olla al fuego con abundante agua y sal. Cuando comience a hervir, introducimos las hojas de col y dejamos cocer tapadas durante 5 minutos. Escurrimos bien y dejamos enfriar a temperatura ambiente. Reservamos.

Cortamos la cebolla en juliana fina y la pochamos en una olla con un poco de aceite. Cuando este ya blanda añadimos el bacon cortado en tiras finas. Sofreímos durante un par de minutos y le incorporamos la carne picada y el curry, removemos y dejamos todo un minuto. Incorporamos entonces la cucharada de salsa de tomate, la mostaza y un poco de perejil picado. Dejamos dorar todo junto un minuto antes de incorporar el vino blanco.

Pelamos la manzana y la cortamos en dados pequeños. Se lo añadimos a la carne y salpimentamos al gusto, tapamos y dejamos 10 minutos a fuego medio.

Encendemos el horno a 200º C.

En una sartén pequeña derretimos una cucharada de mantequilla y hacemos con la harina y la leche una bechamel fina. Salpimentamos y añadimos un poco de nuez moscada.

Ponemos dos hojas de col juntas y en el medio un par de cucharadas del relleno de carne. Cerramos haciendo pequeños paquetes. Los pasamos a una fuente de horno y añadimos por encima una cucharada de la bechamel y un poco de queso rallado.

Metemos en el horno durante 15 minutos y dejamos 5 minutos más en el gratinador hasta que el queso se quede bien dorado.

Servimos bien caliente.

- MARIDAJE: 

Un blanco elaborado con uva Gewüstraminer en la zona del Penedés es fantástico para potenciar los sabores del curry y la col.

- COSTE: barato. 
- DIFICULTAD: fácil.
- TIEMPO: 60 min. 
- CALÓRICO: un par de rollos es un plato único fantástico.

Strawberry Banana
1 1/2 cups frozen strawberries
1 1/2 bananas (fresh)
¼ cup lemon (or lime) juice
1/3 cup maple (or agave) syrup

Pineapple Banana
2 fresh bananas
1 1/2 cups frozen pineapple
½ cup coconut milk
1/3 cup maple (or agave) syrup

Zippy Wild Blueberry
1 1/2 cups frozen wild blueberries
½ cup lemon (or lime) juice
½ cup maple (or agave) syrup
1 fresh banana
½ tsp ginger powder or grated fresh ginger

Spicy Mango
1 1/2 cups frozen mango
1 fresh banana
1/3 cup lemon (or lime) juice
½ cup maple (or agave) syrup
a few dashes of cayenne powder

Directions
Add all ingredients of desired sorbet to a high speed blender. Blend until smooth, but keep it as thick and frosty as possible. Pour into freezer-friendly container. (Metal works best, but anything will do.) Chill until firm, scoop, and serve.
