Vegan Day Five…. …it’s going well. I love fruits & vegetables. Today’s early dinner is just lovely & just as delicious. Roasted spicy sweet potato slices, roasted sweet peppers, roasted onions, steamed edamame, & mashed cauliflower(almond milk, parsley, roasted garlic, pink salt, & fresh pepper). Phenomenal. I could get used to this.

GARLIC MASHED POTATOES



IIngredients:

*8 potatoes peeled and quartered

*1⅓ cup milk

*2 garlic cloves smashed

*3 Tbsp butter

*¼ cup sour cream

*1 tsp salt

*⅛ tsp ground pepper

Directions:

- Place potatoes in a medium pot, bring them to a boil and cook until tender.

- In a small pot bring to a boil 1⅓ cup of milk with 2 smashed garlic cloves.

- Remove from heat and let the mixture stand.

- Drain and mash cooked potatoes using potato masher and hand mixer afterwards.

- Place potatoes back on the stove at medium heat, stirring constantly for 2 minutes until slightly dry, than remove from heat.

- Add to potatoes and mix together 1⅓ cup of milk mixture , 3 Tbsp of butter, ¼ cup of sour cream, 1 tsp of salt, ⅛ tsp pepper until well combined.

- Serve warm and sprinkle parsley or chives on top for garnish ( optional )

Bocaditos de hojaldre, calabac铆n, jam贸n y queso


Pintxo sencillo y riqu铆simo estos bocaditos de hojaldre rellenos de calabac铆n, jam贸n ib茅rico y queso. Todo al horno. Adem谩s podemos cambiar los rellenos con lo que mas nos guste ;)


Ingredientes ( para 12 bocaditos aprox):
  • 1 oblea de hojaldre redonda
  • 1/2 calabac铆n
  • Jam贸n serrano hembra
  • Queso rayado 4 quesos (o al gusto)
  • 1 huevo (para pintar el hojaldre)
Preparaci贸n:

Lo primero que haremos ser谩 hacer los c铆rculos de hojaldre. Extendemos la masa y con ayuda de un corta-pastas, vaso de chupito o similar, hacemos los c铆rculos. Deberemos sacar 24 o un n煤mero par.
Con los recortes que nos van sobrando del hojaldre, los unimos y con un rodillo lo extendemos y podremos seguir sacando circulitos.

Despu茅s cortamos el calabac铆n en rodajas finas, tantos como la mitad de c铆rculos de hojaldre hayamos obtenido.
Si el calabac铆n es de radio superior a nuestros c铆rculos de hojaldre podemos cortarlos con el corta-pasta tambi茅n.



Encendemos el horno a 180潞.

En una bandeja de horno con papel para horno colocamos la mitad de los c铆rculos de hojaldre.

Encima pondremos una rodaja de calabac铆n. Un trozo de jam贸n dobl谩ndolo para que quede dentro del hojaldre. Despu茅s un poco de los 4 quesos rayado. Por 煤ltimo coronamos con otro trozo de hojaldre.


Pintamos con huevo batido cada bocadito.

Metemos en el horno durante 15-17 minutos, hasta que el hojadre superior coga volumen y se dore.

Presentamos.

¡Y listo!

INGREDIENTS
1 small head cauliflower, washed and dried
1¼ cup + ¼ cup mozzarella or vegan cheese shreds, divided
¼ teaspoon dried oregano
¼ teaspoon dried basil
¼ teaspoon garlic powder
¼ teaspoon salt
1 egg or 1 egg-replacer (1 Tablespoon chia seeds combined with 3 Tablespoons water)
5-6 basil leaves, cut into slivers

EASTER EGGS WITH FOOD COLORING


Ingredients:

*1 dozen large eggs

*1 tsp Vinegar

*10 to 20 drops food color

Directions:

- Gently place eggs in single layer in large saucepan. Add enough cold water to cover eggs. Cover. Bring just to boil on high heat. Remove from heat. Let stand 12 minutes.

- Pour off hot water and rapidly cool eggs by running them under cold water until completely cooled.

- Mix ½ cup boiling water, 1 teaspoon vinegar and 10 to 20 drops food color in a cup to achieve desired colors. Repeat for each color. Dip hard-cooked eggs in dye for about 5 minutes. Use a slotted spoon to add and remove eggs from dye. Allow eggs to dry.
