GREEK YOGURT CHEESECAKE

Ingredients

Crust
1 cup ground cookie crumbs

2 tbsp butter, melted

Filling

650 g cream cheese, softened

3 eggs

200 g Greek Fat Free vanilla yogurt

2 tbsp flour

2/3 cup sugar

Directions

Heat oven to 170 C
Mix cookie crumbs with butter, press in bottom and slightly up side of springform pan.
Refrigerate while making filling.

In medium bowl, beat cream cheese with electric mixer until smooth. Add sugar and eggs; beat until smooth. Beat in yogurt and flour until blended. Carefully spread over crust in pan.
Place cheesecake in oven with pan of water on oven rack below it (to prevent cracking). Bake 1 hour 25 minutes or until center is set. Cool 30 minutes.
Without releasing or removing side of pan, run metal spatula along side of cheesecake to loosen. Cover; refrigerate at least 3 hours until chilled. Remove side of pan; leave cheesecake on pan bottom , top with your favorite sauce and serve.

Banana berry “nice” cream topped with edible flowers & sprouted buckwheat for breakfast on this sunny morning ☀️ In a food processor blend:
• 2 bananas (frozen overnight) with 1 cup frozen wild blackberries
• 2 frozen bananas w/ 1 cup frozen raspberries
• 2 frozen bananas w/ 1 cup frozen blueberries
Recipe directly from one of my favourite accounts @thrivingonplants! I couldn’t make my “nice” cream look quite as perfect as hers ;). She has a how-to video of how to make this on her YouTube channel!

1 14 oz package of extra firm organic tofu
1 cup chopped fresh parsley
3 chopped celery stalks
4 tablespoons chopped red onion
¼ cup Sweet Dill Relish with garlic and dill pickles (see recipe below)
½ cup veganaise or any vegan mayo
4 cloves of garlic
1 ½ teaspoon of sea salt
½ tsp turmeric

Cuete mechado

Ingredientes para cuete mechado

*Un trozo de carne del muslo de res de unos 660 gramos (cuete)
*Tres zanahorias picadas
*150 gramos de tocino picado
*Dos chiles poblanos asados, pelados, desvenados y cortado en bastones
*Tres cucharadas de cebolla finamente picada
*Tres dientes de ajo finamente picadas
*Sal y pimienta negra al gusto

Cuete mechado

¿Cómo se prepara Cuete mechado?


Hacemos tres cortes a lo largo de la pieza de carne para introducir los trozos de tocino, chile poblano y la zanahoria. Salpimentamos.

Precalentamos la sartén a fuego medio por tres minutos y doramos el cuete por todos los lados. Agregamos la cebolla, el ajo, el tocino, la zanahoria y el ají poblano que nos sobraron después de mechar la carne.

Tapamos la sartén, dejamos cocinar unos minutos y luego bajamos el fuego al mínimo, dejamos cocer por unos 40 minutos o hasta que la carne esté tierna. Cortamos en rebanadas delgadas y servimos bañadas con su propia salsa.


Falda de cerdo marinada

Ingredientes para falda de cerdo marinada

*Dos kilos de carne de cerdo (falda o una pierna deshuesada)
*Media taza de jugo de limón
*Una taza de jugo de naranja
*Diez dientes de ajo
*Aceite de achiote al gusto
*Media cebolla roja en corte juliana delgada
*Dos hojas de plátano
*Sal al gusto

Para acompañar:
*Salsa criolla, cebolla, ají limo, ají amarillo, y culantro

Falda de cerdo marinada

¿Cómo se prepara falda de cerdo marinada?


La noche anterior licuamos el aceite de achiote con los ajos y sal al gusto. Rebanamos la carne en trozos delgados en el sentido de la fibra de la carne. Las colocamos en un tazón, agregamos la mezcla licuada, tapamos y dejamos marinando en la refrigeradora.

Al día siguiente asamos las hojas de plátano para ablandarlas y las acomodamos en una sartén grande, ponemos encima la carne junto con la cebolla y sal, envolvemos bien la carne con la hoja de plátano, tapamos y dejamos cocer a fuego medio por diez minutos. Bajamos el fuego y dejamos cocinar por dos horas o hasta que la carne esté tierna a punto de deshacerse.Servimos acompañado con una salsa criolla.

INGREDIENTS

For the Salmon Cakes:

  • 500 grams salmon
  • 2 eggs
  • ⅔ cups almond flour
  • 2 tbsp fresh ginger, grated
  • 2 tbsp tamari
  • ½ tbsp sesame oil
  • 1 tbsp lime juice
  • 1 tsp lime zest
  • ½ cup scallions, chopped
  • ¼ cup coriandor/cillantro, chopped
  • 2 tbsp oil

For the Tropical Salsa

  • 1 mango
  • 1 kiwi
  • 1 tbsp chopped jalapeño
  • 1 tbsp lime juice
  • 1 tbsp lime zest
  • 1 avocado

Ingredientes para chuletas de cerdo a la cerveza

*Seis chuletas gruesas de cerdo
*Tres dientes de ajo finamente picados
*Media botella de cerveza rubia
*Sal y pimienta al gusto

Chuletas de cerdo a la cerveza

¿Cómo se prepara chuleta de cerdo a la cerveza?


Lavamos bien las chuletas y las marinamos con el ajo, la cerveza, sal y pimienta. Tapamos y dejamos en la refrigeradora por una hora.

Precalentamos el sartén por tres minutos, colocamos las chuletas en la sartén caliente y doramos de manera uniforme. Cuando las chuletas se puedan despegar, las volteamos para que se doren del otro lado. Servimos acompañado con una guarnición de su preferencia.

Beer Bread with sun dried tomatoes & feta

Ingredients:
450 g self raising flour
3 tbsp sugar
330 ml beer

150 g feta, crumbled
100 g sun dried tomatoes, drained & chopped
1 tsp oregano

Directions:
Preheat oven to 170 C, and line a 25~12 cm loaf tin with baking paper.
In a bowl whisk flour, sugar. Add the beer and stir with a spoon till no flour is visible.
Add the sun dried tomato and feta and stir to incorporate .
Transfer mixture to loaf pan, and bake for 1 hour.
Let cool for 5 min before serving.
