Lemon - Mustard Chicken with Vegetables

Ingredients:
- A whole chicken
- 8 to 10 potatoes, cut into wedges
- 4 carrots, sliced
- 3 zucchini, sliced
- 3 eggplant, sliced
- 3 tbsp olive oil
- 1 tsp salt
- ½ tbsp oregano
- ½ tsp pepper
- juice of 1 lemon

Directions:
Rub salt and oregano over chicken and vegetables.
Brush chicken with mustard and place it together with the vegetables into a deep roasting pan
In a mixing bowl whisk the olive oil and the lemon juice.
Pour over the chicken and vegetables
Place the squeezed lemon halves in the chicken’s body cavity.
Add 1 cup of water into pan, so the vegetables are almost covered.
Top with some fresh pepper.
Place the pan, covered, in a preheated oven for 1 hour and 15 min. Bake at 400F ( 180C ).
Continue cooking, uncovered, for 10 more min, until chicken and potatoes are tender and golden.
Serve warm, with Feta cheese.
