NO BAKE STRAWBERRY CHEESECAKE

Ingredients

* 300gr/10oz cream cheese, softened
* 300gr/10oz heavy cream
* 1 cup condensed milk
* 250gr/8,8oz digestive biscuits, crushed
* 100gr/3,5oz butter, melted
* 400gr/14oz fresh strawberries, hulled and halved lengthwise
* 30gr/1oz icing sugar
* 1 tsp water


Directions

Mix together the crushed digestive biscuits and the butter. Press into the pie pan.
Chill in the fridge for 1 hr to set firmly.

Beat the heavy cream until fluffy with an electric mixer. Gradually beat in the condensed milk , cream cheese until smooth.

Spoon the cream mixture onto the biscuit base.
Smooth the top of the cheesecake down with a spatula. Leave to set in the fridge overnight.

Pur茅e half strawberries in a blender or food processor with 25g icing sugar and 1 tsp water, then sieve. Pile the remaining strawberries onto the cake, then pour over pur茅e.

Mini Beef Wellingtons

INDIVIDUAL BEEF WELLINGTONS
Serves 2 generously

You’ll Need
– Two 2 ½-to-3-inch-tall pieces beef tenderloin (filet mignon), about ¾ pound
– 1 tablespoon vegetable oil
– 3 tablespoons unsalted butter
– 6 ounces finely-chopped baby bella mushrooms
– 1/3 cup finely-chopped sweet onion
– 1 large clove garlic, minced
– ½ teaspoon kosher salt, or more to taste
– Freshly-ground pepper, to taste
– ¼ cup dry sherry
– 1 large sprig fresh thyme
– 1 tablespoon chopped fresh parsley
– 1 sheet (½ box) puff pastry
– 1 tablespoon Dijon mustard
– Egg wash (1 beaten egg + 1 tablespoon milk)

How To

  1. Heat a stainless steel pan or cast iron skillet over medium-high heat. Add the vegetable oil and heat until just starting to smoke.
  2. Rub the meat generously with salt and pepper.
  3. Once the pan is very hot, sear the two filets very briefly on each side. You don’t want to cook the interior of the meat at this point, so it shouldn’t be more than a minute or two per side. Remove the filets from the pan and place on a plate in the freezer while you make the filling.
  4. Let the pan cool slightly and turn the heat down to medium. Add the mushrooms, onion and garlic to the pan, and sprinkle on salt and pepper. Cook until the mushrooms release all their water and the onion is translucent.
  5. Add the sherry and thyme. Cook until the sherry evaporates. Taste for salt and pepper, and season as necessary.
  6. Remove from the heat and refrigerate until cold, then stir in the chopped parsley.
  7. Roll out one puff pastry piece and cut in half, so you have two rectangular strips of dough.
  8. Remove the steaks from the freezer and brush with the Dijon mustard on both sides.
  9. Put a quarter of the mushroom mixture in the middle of one piece of the puff pastry. Top with one steak, then add a quarter more of the mushrooms. Repeat with the other steak, puff pastry piece and mushrooms.
  10. Fold the long sides of the pastry over the steak, tucking in and tightly sealing all the edges so the juice doesn’t escape. Wrapping it all in plastic wrap can help!
  11. Preheat the oven to 425 degrees Fahrenheit and line a sheet pan. While the oven preheats, put the wrapped beef in the freezer.
  12. Once the oven is hot, remove the beef from the freezer and put on the lined sheet pan. Coat with the egg wash.
  13. Bake for 25 minutes, until a thermometer inserted into the middle of the steak reads 135 to 140 degrees Fahrenheit (medium-rare) and the pastry is a deep golden brown.
  14. Cut in half so you can see the intersection of steak, pastry and mushrooms, and serve.

Expert Tips

  • Make the puff pastry easier to work with by keeping it cold. That’s why this recipe calls for chilling the meat and filling in between steps!
  • The pan needs to be very hot in step 3 because it’s the key to searing the meat and subsequently adding flavor. If the pan isn’t hot, the meat either won’t brown, or it will take too long to brown and the middle will start to cook.
  • You can make this recipe ahead of time by following it up to step 9, then freezing until ready to bake. When you’re ready to cook, just put it in the oven directly from the freezer without thawing, and cook until the interior temperature of the meat is 135 to 140 degrees Fahrenheit (for medium rare), which may take longer than the 25 minutes.

Ingredients
* 2-3 Apples, washed and dried
* 2 tablespoons granulated sugar
* 1 teaspoon ground cinnamon

Directions
1. Preheat oven to 100 C/ 225°F
2. Line a large baking sheet with parchment paper.
3. Using a mandoline slice the apples evenly.
4. Lay the apple slices onto the lined baking sheet.
5. Mix the sugar and cinnamon together
6. Sprinkle both sides of the slices liberally with the cinnamon sugar.
7. Bake for 45 minutes. Flip the apple slices over and bake for another 45 minutes until lightly browned and crisp.
8. Remove the pan from the oven and allow the apple chips to cool on the pan.

Baked Sweet Potato Mexican Style

Full Recipe:
2 people
Preheat the oven to 200 degrees. With a fork pinch the sweet potatoes several times and then put them into the oven as they are for about 40 min. or until done.

Guacamole
Prep time: 5 min.
Ingredients
1-2 avocados
½ onion chopped
handful coriander
½ green chili, chopped
½ lime
salt to taste

Pico de Gallo
Prep time: 5 min.
Ingredients
1 large tomato finely chopped
½ onion chopped
handful coriander
½ green chili, chopped
½ lime

Refried Black Beans
Prep time: 5 min., Cooking time 40-50 min

Ingredients
pre-soaked black beans (I usually make a bigger batch, so about 2 cups)
1 onion chopped
1 heaping tbsp dried coriander
enough water to cover the beans
salt + pepper to taste
1 tsp chili powder or to spice level
1 tbsp paprika powder
2 tbsp tamari sauce
1 green chili chopped

Instructions
1. Pre – soak beans for at least 8 hours.
2. In a big pot add beans and enough water to cover the beans, bring to a boil, then turn down to a simmer and cook for 40-50 min. or until beans are done.
2. In a big pot add all other ingredients except beans and water. Stir until fragrant over medium heat, then add beans and some more water and cook until you get a nice fragrant bean paste.

Cashew Sour Cream
I’m also not a big fan of anything cashew based (except cashewgurt) because 1) it’s too dense for me and 2) it just tastes like cashews 馃槈 But for the sake of recreating this poutine, I wanted to try out a cashew sour cream. And it actually tastes pretty darn close to sour cream. Loved it!

Prep time: 5 min.
Ingredients
½ cup cashews
a good squeeze lime juice
¼ cup filtered water
1 tbsp APCV
salt + pepper

Instructions
1. Presoak the cashews for at least 1-2 hours.
2. Then just mix everything together in a blender.
Finally just cut the baked sweet potatoes open and load them with all things mexican. = Heaven on earth, lemme tell you!

INGREDIENTS
* 1 cup butter, softened
* 4½ to 5 cups powdered sugar
* 4 Tablespoon cocoa
* 1 teaspoons vanilla
* 5 Tablespoons heavy cream
* ¼ teaspoon salt

INSTRUCTIONS
1. In a medium bowl combine butter, powdered sugar, cocoa, vanilla, cream/milk, and salt and beat for 5-7 minutes until light and fluffy.
2. Add more powdered sugar to thicken and stiffen up frosting or more cream/milk to thin frosting out depending on use. If you are frosting cookies or a cake use less powdered sugar.

PUMPKIN & FETA CHEESE PIE

- Traditional pie from Thessaly without phyllo.
- A delicious and easy solution for a quick appetizer with traditional Greek products.


INGREDIENTS:

-1 kg/35oz pumpkin, grated
-300gr/10.5oz Feta cheese, crumbled
-500ml milk or Greek yogurt
-3 eggs, lightly beaten
-200gr/7oz butter, melted
-3 cups corn flour
-1 cup all purpose flour
-1 tsp baking powder
-1.½ tsp salt
-1 tsp pepper


DIRECTIONS:

Place grated pumpkin in a colander and squeeze well.

In a large bowl mix the corn flour, salt, baking powder and all purpose flour.

Add in the remaining ingredients and stir well until a very thick batter.

Butter a baking pan and pour into the pumpkin mixture.

Put the pan in the oven and bake the batzina at 160 C for about 40 min or until golden brown.

Chocolate Orange Marble Cake


Ingredients
* 250gr/8.8oz all-purpose flour, sifted
* 1½ tsp baking powder
* ¼ tsp salt
* 1¼ cups granulated sugar
* 2 large eggs, room temperature
* 1 cup buttermilk
* ¼ cup freshly squeezed orange juice
* 1 tbsp orange zest
* ½ cup safflower oil or butter
* 1 tsp orange extract
* ½ cup cocoa powder


Directions
1. Preheat oven to 150 C / 300 F. Butter a loaf pan.
2. In a large bowl sift together flour, baking powder, and salt. Set aside.
3. Place oil and sugar in a stand mixer bowl . Beat on medium high until mixture is blended.
Add the eggs, buttermilk , orange extract and the flour mixture.
4. Beat mixture until it becomes light and fluffy.
5. Divide batter into two and fold the cocoa powder to one of the two mixtures.
6. Dollop the orange and chocolate mixtures alternately into the pan first, next to each other, then, in layers on top of each other. When done, insert a knife to the mixture (all the way down) and start swirling the batter. Don’t mix to the point where all the batter turns chocolaty.
7. Bake for about 1 hour. Let the cake cool for 10 minutes on a wire rack, then turn it out from the pan and let it cool completely.

Una deliciosa sopa para abrigarse en los d铆as invernales, en Trujillo suele servirse espesa y se acompa帽a con pepi谩n de arroz con cabrito.

Ingredientes para sopa te贸loga

*Una gallina en trozos
*Un kilo de papa
*Tres cebollas
*300 gramos de queso mantecoso
*Una taza de leche evaporada
*Una zanahoria grande en trozos
*Un tomate picado sin piel ni semillas
*Seis rodajas de pan molde remojados en caldo
*Una rama de huacatay
*Una cucharada de azafr谩n del norte
*Dos cucharadas de aj铆 amarillo
*Una cucharada de aj铆 mirasol
*Dos cucharadas de almendras picadas
*Apio, poro, perejil, pimienta, laurel y sal al gusto

Sopa te贸loga

¿C贸mo se prepara sopa te贸loga?


Cocinamos la gallina, con zanahoria, poro, apio, sal, pimienta, laurel y perejil. Dejamos cocinar durante dos horas o hasta que la gallina est茅 tierna. Aparte remojamos los panes con caldo y lo licuamos.

Doramos a cebolla, el ajo, el tomate, el azafr谩n, el aj铆 amarillo y el aj铆 mirasol. Cuando est茅 cocido agregamos el pan licuado, el caldo y las almendras. Dejamos que de un hervor e incorporamos las papas en trozos y el huacatay. Cuando las papas est茅n listas, agregamos el queso en trozos, la leche y la gallina. Sazonamos con sal y servimos.


Sopa de pelotas de arroz

Ingredientes para sopa de pelotas de arroz

*Cuatro tazas de arroz cocido con ajos
*Media taza de yuca rallada
*Un huevo
*Dos cebollitas chinas picadas
*Media taza de harina de ma铆z
*Dos h铆gados de pollo cocidos y picados
*Una gallina sancochada
*Ocho tazas de caldo de gallina
*Cuatro trozos de yucas amarillas
*Sal al gusto

Sopa de pelotas de arroz

¿C贸mo se prepara sopa de pelotas de arroz?


Sancochamos la gallina en agua y hacemos un caldo concentrado. Mezclamos el arroz, las cebollitas, las yucas ralladas, la harina de ma铆z, el huevo, el h铆gado picado y la sal.

Formamos bolas y las cocinamos en el caldo hirviendo. Servimos con yucas sancochadas y con una presa de gallina.

MPAMIES LEMONATES
GREEK STYLE OKRA LEMON


Ingredients
* 4 tbsp Greek olive oil 
* 1 large onion, finely diced
* 2 tbsp fresh dill, chopped
* 500gr/1l pound okra (fresh & cleaned or frozen)
* 1 cup water
* salt & pepper, to taste
* 1 lemon, juiced
* Fresh parsley, finely chopped

Directions
In a medium pot over medium-high heat, pour 2 tablespoons of olive oil and saute the onion.
Add the okra and dill to the pot (unthawed).
Season with salt and pepper.
Stir once, do NOT stir again until okra is cooked through.
At this point lower the heat to medium.
Pour water and cover the pot with a lid and let cook for about 20 minutes or until the okra is tender.
Remove the lid, pour the lemon juice and sprinkle some parsley.
Drizzle the last 2 tablespoons of olive oil.
Serve Mpamies Lemonates with feta cheese and homemade crispy bread.

Rosemary-Garlic Smashed Potatoes
 

Ingredients
* 500gr/1 pound small potatoes, washed
* 2 Tbsp olive oil
* Salt and pepper, to taste
* 2 cloves garlic minced
* 2 Tbsp. chopped rosemary

Instructions
* Preheat oven to 200 C/400 F. Line a baking sheet with parchment paper and set aside.
* Fill a large stockpot with water and bring it to a boil. Add potatoes and boil for 10-12 minutes. Drain.
* Transfer to baking sheet and use the bottom of a glass to lightly flatten the potatoes - you want the skin to break.
* Drizzle with olive oil, salt, and pepper. Cook for 25-30 minutes. After the first 20 minutes, sprinkle the garlic and rosemary on the potatoes and return to the oven. When done, the potatoes should be golden on the outside and the skin should be crispy.

CANDIED CITRUS PEEL

Ingredients
* 2 grapefruits
* 3 oranges
* 3 lemons
* 1 ½ cups sugar


Directions
1. With a sharp paring knife, slice off ends of grapefruits, oranges, or lemons. Following curve of fruit, cut away outermost peel, leaving most of the white pith on fruit. Slice peel lengthwise into ¼-inch-wide strips. 

2. In a medium pot of boiling water, cook peel until tender, about 10 minutes. With a slotted spoon, transfer peel to a wire rack set over a rimmed baking sheet; spread in a single layer to dry slightly, about 15 minutes. 

3. In a medium saucepan, bring 1 cup sugar and 1 cup water to a boil over high, stirring to dissolve sugar. Add peel and boil until it turns translucent and syrup thickens, 8 to 10 minutes. With slotted spoon, transfer peel to wire rack, on a rimmed baking sheet.
4. Roll strips in sugar. Arrange in a single layer on a wire rack, and let dry for at least 30 minutes.
