TRADITIONAL BATZINA PIE
PUMPKIN & FETA CHEESE PIE
- Traditional pie from Thessaly without phyllo.
- A delicious and easy solution for a quick appetizer with traditional Greek products.
-1 kg/35oz pumpkin, grated
-300gr/10.5oz Feta cheese, crumbled
-500ml milk or Greek yogurt
-3 eggs, lightly beaten
-200gr/7oz butter, melted
-3 cups corn flour
-1 cup all purpose flour
-1 tsp baking powder
-1.½ tsp salt
-1 tsp pepper
Place grated pumpkin in a colander and squeeze well.
In a large bowl mix the corn flour, salt, baking powder and all purpose flour.
Add in the remaining ingredients and stir well until a very thick batter.
Butter a baking pan and pour into the pumpkin mixture.
Put the pan in the oven and bake the batzina at 160 C for about 40 min or until golden brown.
