Smoothie Ingredients:
- 3 frozen bananas
- ½ pink dragon fruit
- water
- 1 tsp coconut sugar

Toppings:
- buckinis
- banana
- shredded coconut
- chia seeds
- goji berries

- blend all the smoothie ingredients until smooth, place in a pretty bowl and add toppings

Lemon Pie Ingredients 4 eggs 60g soft unsalted butter 240g...



Lemon Pie


Ingredients

4 eggs
60g soft unsalted butter
240g caster sugar
60g self raising flour
90g dessicated coconut
¼ tsp salt
Juice and zest of 3 lemons
375ml whole milk
Icing sugar for dusting

Directions

Preheat the oven to 180C .
Grease a 25cm pie dish and set aside.
Put all the ingredients into a food processor and blitz until blended, for 3 min.
Pour the mixture into the pie dish/cake tin and bake for 1 hour.
Once baked, let cool for 10 min, and then serve with a dusting of icing sugar.

Dried apricots (make sure they are soft!), 5
Dates (the softer the better), 4-5
Almond butter, 2 tbsp
Almonds (ground), 40g
Maple syrup, 1 tbsp
Cacao powder, 1 tbsp
Coconut oil (melt before using), 1.5 tsp

Optional Toppings: chopped pistachios, cacao powder and a gorgeous dehydrated plum powder.

Avocado Strawberry Salad

serves 2 ~ $2.45 per serving

ingredients
18 stawberries ($2.50)
2 tablespoons agave ($.20)
2 tablespoons balsamic vinegar
2 tablespoons olive oil
pinch salt
2 avocados ($2.00)
1 small onion ($.20)

Lunch
Summer Salad with Cucumber Dressing
serves 2 ~ $2.63 per serving

ingredients
5 ounces arugula ($2.50)
1 cucumber, sliced ($.50)
about 12 cherry tomatoes ($1.00)
1 medium onion ($.10)
dressing
1 cucumber peeled and chopped ($.50)
2 tablespoons olive oil ($.10)
2 tablespoons lemon juice ($.40)
1 tablespoon agave ($.10)
1 teaspoon tarragon ($.05)
½ teaspoon salt
½ teaspoon pepper
edible flowers for garnish


Dinner
Taco Salad

Greek Prasopita. Leek Pie

Ingredients

1 cup dill, finely chopped
1Kg leeks, washed & cut into round slices
1 pack phyllo sheets
½ cup Milk
250g anthotiro cheese (ricotta), crumbled
200g Feta Cheese , crumbled
1 onion, chopped
3 tbsp olive oil
3 Eggs
Salt
Pepper
Olive oil + 2 eggs for brushing

Directions

In a frying pan heat the olive oil and sauté leeks and onion until tender.
Remove from the heat and set aside

In a large bowl, add the leeks, dill, milk, anthotiro, feta, eggs, salt and pepper to taste and mixing to combine.

Preheat the oven at 180C

Brush the baking pan with olive oil and lay 1 phyllo sheet, to cover the pan, allowing it to exceed the pan. Brush it with olive oil and continue with ½ of the remaining phyllo sheets.

Spread evenly on top, half of the leak mixture, cover it with one phyllo sheet, brush it with olive oil and spread on top the remaining leek mixture. Fold inwards the exceeding phyllo sheets and brush with olive oil.

Lay on top one phyllo sheet, to cover the leek mixture. Cut with a knife any exceeding phyllo sheets from the pan and brush with olive oil. Repeat with the remaining phyllo sheets.

Whisk in a small bowl the eggs to form an eggwash.

Score the surface of the leek pie, pour the eggwash mixture over and bake in the preheated oven for about 30 to 40 min.
Remove the “prasopita” from the oven, cut in pieces and serve.

Homemade Fruit Leather

Ingredients

3 Cups of Fruit of your choice ( I used cherries & apricots )
Sugar , optional

Directions

Blend the fruit until smooth, then spread onto a parchment-lined baking sheet.
Bake at the lowest temperature for 6 to 8 hours or until the fruit is dry .
Cut into strips and store in a glass container in the refrigerator.

Raw Apricot Chia Energy Bars

Gluten free, nut free, dairy free, vegan snack!

Ingredients:
1 cup dried apricots
1 cup pitted dates
2 tbsp chia seeds
¼ tsp cinnamon
½ cup raw pumpkin seeds
½ cup hemp hearts
2 tbsp coconut oil melted

Directions: Line a 8x8 or 9x9 square pan paper. Place dates, apricots and cinnamon in a blender, and pulse several times until dates ands apricots turn into chunks. Add pumpkin, chia seeds and coconut oil to the mixture in the blender, and pulse until there are small chunks of pumpkin seeds. Press the mixture into the prepared pan. Roll the top with a glass to flatten completely. Refrigerate for 45 minutes. Slice into bars or squares. Enjoy!
