These Garlic Roasted Peppers are absolutely packed with flavor but, with just 1.5 Tbsp oil for the entire 5 pepper recipe, light on fat. They’re so easy to throw together (literally, just chop and throw them on a pan) and are perfect for kicking up your salads, sandwiches, even soups and dips (roasted pepper hummus? yes please!).
