Sweet Potato w. Beans, Sweet corn, Cilantro and Guac by @kale.of.a.life 💚

For 4 servings:
Baked & Stuffed Sweet Potatoes
4 medium sweet potatoes, well washed
1 ripe avocado
1 lime
3 tablespoons finely diced red onion (more or less, depending on your taste)
A handful of fresh cilantro, chopped
1 can sweet corn, rinsed
1 can beans of choice, rinsed
1 teaspoon garlic salt
1 teaspoon onion powder
1 tablespoon olive oil (plus more for baking sheet)
Salt & pepper to taste (optional)
Chili flakes (optional)

Preheat oven to 425F. Lightly oil a baking sheet and place the sweet potatoes on top. Bake for 35-40 minutes (or until soft and slightly caramelized around the edges). Halfway through cooking time, slice the potatoes, lengthwise, in half. Remove from the oven and cool.

For the smashed avocado, cut the avocado in half and remove the pit. Scoop out the avocado into a small bowl, squeeze half of a lime on top, and mash well with a fork.

In a bowl, mix the sweet corn, beans, cilantro, red onion, garlic salt, onion powder, the juice from the other half of the lime and olive oil (as well as salt and pepper, if needed). Using a spoon, scoop some of the mixture into the sweet potato. Garnish with mashed avocado, more cilantro and chili flakes (optional). Enjoy!
