BLUEBERRY LOAF CAKE

Ingredients 
230 g / 8oz flour, sifted
1 tsp baking powder
1 tsp vanilla extract 
½ tsp salt
1 cup sugar
1/2 cup unsalted butter
2,eggs
1 cup milk
1 cup fresh or frozen blueberries

Directions
Place melted butter and sugar in a stand mixer bowl . Beat on medium high until mixture is blended.
Add the eggs, milk, vanilla, baking powder, flour and salt.
Beat mixture until it becomes light and fluffy.
Gently fold in blueberries.
Pour mixture into loaf pan and Bake cake for 1 hour at 160C / 320F.
Cool cake in the pan on a wire rack for 15 minutes.
Invert the cake onto the rack and cool completely.
