These carrot taco shells are a wonderful healthy taco that will boost your veggie intake while enjoying finger food. All you need to make them are 4 ingredients (or 5 if you add salt)…RECIPE
Ingredients
- 1 cup ½ grated carrot, packed (about 200 g) + ½ cup tap water to cook
- ½ cup grated cheese (full fat or lowfat, edam, mozarella or cheddar (75g)
- 2 eggs, size 6
- 3 tablespoon oat bran (oat flour or almond meal for lower carb option)
- Salt, pepper - if desired
