VEGAN PIZZA by @smoothie_swan 💚
The crust (makes two pizzas): - 0,5L water
- 25 g organic yeast - 1 tbsp olive oil - a hint of salt - Melt the yeast in the water and add the salt and oil. - spelt flour
- buckwheat flour - oat flour (about 3-4 cups total)
Add flours using about 1/3 of each type of flour in the dough so that you get a fast pizza dough. Split the dough in two and press the dough into round crusts using fingers. Let them raise for about 30 minutes on baking sheets while you prepare the filling.
Beet root paste (inspired by @a_spoonful_of_happiness) - 2 beet roots in cut in small pieces baked in the oven for about 30 minutes - 1 glove garlic - 1 tbsp olive oil - 1 tbsp tahini paste - salt and pepper
Blend the ingredients into fine paste in your food processor and spread on top of one of the pizzas crusts. You can double it up if you want beet paste on both of your pizzas.
For the topping I’ve used:
- mushrooms - yellow bell pepper
- scallion onions
- cherry tomatoes - vegan cheese of your choice (or simply leave out) - fresh arugula (add after baking)
Bake in 225 degrees Celsius for about 12-15 minutes.
