BILBERRY LEMON BUNDT CAKE INGREDIENTS: - 450 g all-purpose...



BILBERRY LEMON BUNDT CAKE

INGREDIENTS:


- 450 g all-purpose flour

- 1 tsp. baking powder

- ¼ tsp. salt

- 1 cup (2 sticks) unsalted butter, room temperature

- 2 cups granulated sugar

- 1. ¼ cups buttermilk

- 3 eggs

- ½ tsp. vanilla extract

- zest of 1 lemon

- 2 cups billberries + ½ cup cranberries, marinated ( see notes )

DIRECTIONS:


Preheat oven to 150C. Grease and flour a Bundt pan.

In a medium bowl, combine the flour, baking power and salt and mix well.

In the bowl of a stand mixer, fitted with a paddle attachment, cream the butter and sugar together until fluffy.

Add the eggs and vanilla and mix until well-combined. Add buttermilk, lemon zest and the dry ingredients and mix well.

Fold in the berries and mix lightly.

Spread the batter into the prepared pan and bake in the preheated oven for 1 hour.

Cool completely before cutting.

NOTES:
Marinated Berries
Ingredients
1 cup balsamic vinegar
3 tbsp brown sugar
1 tsp vanilla extract
2 cups billberries + ½ cup cranberries
Directions
In a small bowl, whisk together the balsamic vinegar, brown sugar and vanilla.

Pour the balsamic vinegar mixture over the berries. Let the fruit marinate for 1 hour.

Drain the marinade.
