Mediterranean Pork Skillet

Ingredients:

- 1 large tenderloin, sliced into thick pieces
- 1 ½ cups fresh mushrooms, sliced
- 1 onion, chopped
- 1 clove garlic, minced
- 1 tbsp olive oil
- 1 tsp butter
- 2 green bell peppers, sliced
- 2 red bell peppers, sliced
- ½ tsp salt
- pinch of fresh ground pepper
- 1 tsp dried oregano
- 1 tbsp mustard + juice of 1 lemon


Directions:

In a small bowl whisk juice of 1 lemon and 1 tsp mustard. Set aside.
In a large nonstick skillet heat the olive oil and butter, add the tenderloin, onion and cook for 6 min.
Add the garlic, mushrooms, oregano, bell peppers and cook for 6 min more.
Add the lemon - mustard mixture, season with salt and pepper and simmer for 15min or until tenderloin is tender.
Remove from heat, sprinkle with fresh parsley and Serve.
