Cheeseburger Macaroni

  • 1 lb lean hamburger meat
  • 1 pkg taco seasoning
  • 1 can Rotel tomatoes and green chilies (or fresh diced tomatoes)
  • 2 cups beef broth (or water)
  • 1 cup elbow macaroni

Cheese Sauce:

  • 2 Tablespoons butter
  • 2 tbsp flour
  • ¾ cup milk
  • 1 cup shredded cheddar cheese
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp Cayenne (optional)


Make your Meat:

  1. Brown your Hamburger meat in the skillet, drain
  2. Add Taco Seasoning, Beef Broth, and Macaroni, Heat to Boil then reduce.
  3. Cover the pan and let it simmer until the Noodles are tender - bout 12 minutes

Make your Cheese:

  1. Melt Butter in Saucepan over med/high heat
  2. Stir in the Flour - stir/cook for about 5 minutes
  3. Stir in the Milk, Turn up the heat and stir until thickened
  4. Remove from heat and stir in the Shredded Cheddar, add salt, pepper, cayenne, etc…


1. Exactly what it sounds like: Pour the “Cheese” into the “Meat” and Stir
