NO BAKE LEMON ICEBOX CAKE
-2 boxes of lemon instant pudding
-1 tsp vanilla extract
-2 pkt of cream crackers or petit beurre biscuits
-220 g Cool Whipped cream
-Zest of one lemon
-Juice of one lemon
Prepare the lemon pudding, according the box directions. Add in the lemon zest and the vanilla extract . Set aside.
With a hand mixer or in the bowl of a stand mixer, whip the cream and fresh lemon juice, until it just holds, stiff peaks.
Arrange biscuits in the bottom of a dish.
Spread half the pudding mixture over the biscuits
Repeat with remaining biscuits and pudding mixture.
Top with whipped cream.
Chill for at least 4 hours before serving. Enjoy.
